What problem does this address?

When transforming text with iOS Writing Tools, the formatting is not preserved or converted to appropriate Gutenberg block types. This negates the benefit of using the Writing Tools.

What is your proposed solution?

We should preserve the formatting, likely converting the block types as necessary.
