Update config docs to reflect SGX removal #6731

Towards #6413. The docs still list SGX as the default enclave platform https://microsoft.github.io/CCF/main/operations/configuration.html#configuration-options

We can change the default now, and we are planning to drop that whole section of the config in #6623.
