Hi

I realized that the eeprom of my printer is emptied (e.g., z-offset, leveling mesh) after I flashed the firmware. Is that true? If yes, is that by design?

There are scenarios when Marlin is unable to use information from stored values in EEPROM, and thus can reset it.
Usually it shows message about that on boot. Most often cases for that are about migrating between versions (mostly downgrades, but can happen on upgrades).

There is EEPROM editor plugin in Octoprint that can save backup of EEPROM content and restore it if needed.
My recipe is to just save few Gcode commands on what I usually adjust, so in case something got reset, it will be just few lines in terminal.

btw, changing grid size can also invalidate EEPROM content.
